Edit: Also, Apple has a new feature you can enable called ‘Stolen Device Protection’ which will only allow biometrics, outside of common areas such as work or home, to change your device passcode, accessing stored credit cards, or changing Apple ID information. Even if they saw your PIN and stole your device you’d be safe to get online and lockdown/wipe your phone.
